Just-Desserts!

This first recipe is a delicious and rich sounding rice pudding. I look forward to trying this as soon as I pick up the missing ingredients. Enjoy the pictures and commentary, I did! :)

Shopping List: Spices: 2 cardamom pods 1 vanilla pod 3 cloves 1 cinnamon stick Liquids/Solids: 1 tin of coconut mild (400ml) 2.5 cups of milk (600ml) 4tbsp sugar Zest of 1 lime 1/2 lb of fat grain rice (225g), any rice works really 2 egg yolks 2 tbsp marscapone cheese (can substitute w/ cream cheese)



And now, for a sure to be favourite new brownie recipe:

Hi Deb,

here is our coconut brownie recipe:

3 cups coconut sugar [or white sugar]
1 cup coconut oil, melted
1 tablespoon vanilla extract
4 eggs
1 1/2 cups coconut flour [or all purpose flour]
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips
1 cup toasted coconut
caramel sauce
hot fudge sauce

Oven to 350*

combine sugar, oil and vanilla extract in large bowl. beat in eggs.
Mix flour, cocoa powder, and salt together in a seperate bowl. gradually
stir flour mixture into egg mixture until blended into a batter. Add
chocolate chips and 3/4 cup toasted coconut, and ~3 tablespoons of caramel
sauce into the batter; spread evenly into baking dish

bake for 35 ~ 40 minutes

Sprinkle 1/4 cup coconut over the brownies, drizzle caramel sauce and
fudge sauce
